Prep Time: 5 minutes | Cook Time: 12 minutes | Serves 4

Ingredients : 

2 garlic cloves, sliced
2 tablespoons chopped parsley
1 cup flour
4 eggs
Salt, to taste
2 cups bread crumbs
1 teaspoon Italian seasoning
2 eggplants, sliced
Cooking spray

Directions : 

1. Spray the air fryer basket with cooking spray. Set aside.
2. A dish should be filled with flour. In a shallow bowl, combine the salt and eggs using a whisk. Separately,
combine the bread crumbs and Italian seasoning in a small basin.
3. Individually dredge each slice of eggplant in the flour, then the beaten eggs, and then the bread crumb
mixture.
4. Place the coated eggplant slices in the basket.
5. Place the basket of the air fryer in Rack Position 2, choose Air Fry, adjust the temperature to 390 degrees
Fahrenheit (199 degrees Celsius), and set the timer for 12 minutes.
6. Halfway through the cooking process, flip the eggplant pieces.
7. When cooked, the eggplant slices should be golden brown and crisp. Transfer the eggplant slices to a
platter and sprinkle the garlic and parsley on top prior to serving.
